Burrito

Ingredients

      • 2 boneless, skinless chicken breasts
      • 1 can (15 oz) black beans, drained and rinsed
      • 1 cup cooked rice (white or brown)
      • 1 large tomato, diced
      • 1 cup shredded cheese (your choice)
      • 1 ripe avocado, sliced
      • 4 large flour tortillas
      • 1 tablespoon olive oil
      • 1 teaspoon chili powder
      • Salt and pepper to taste

Directions

1. Cook the Chicken:

      • Season the chicken breasts with salt, pepper, and chili powder.
      • Heat the olive oil in a skillet over medium-high heat.
      • Add the chicken breasts and cook for about 5-7 minutes per side, or until fully cooked and no longer pink inside. Make sure it reaches an internal temperature of at least 165°F
      • Remove from the skillet, let it rest for a few minutes, then slice or shred the chicken.

 

2. Prepare the Rice and Beans:

      • If not already done, cook the rice according to the package instructions.
      • In a small saucepan, heat the black beans over low heat until warmed through.

 

3. Assemble the Burritos:

      • Warm the tortillas in a microwave or on a dry skillet for a few seconds to make them more pliable.
      • Lay a tortilla flat and start layering the ingredients in the center: a portion of rice, black beans, sliced chicken, diced tomato, sliced avocado, and shredded cheese. Note: you can add any other toppings you’d like (example: lettuce, onions, mayo, hot sauce, etc.)
      • Fold the sides of the tortilla over the filling, then roll it up from the bottom to form a burrito. Repeat with the remaining tortillas and fillings.

 

4. Optional: Toast the Burritos:

      • For a crispy burrito, heat a clean skillet over medium heat.
      • Place the burrito seam-side down and toast for 1-2 minutes per side until golden brown and crisp.

 

5. Serve and Enjoy:

      • You can also serve with salsa, sour cream, or guacamole on the side for extra flavor.

Cheeseburger

Ingredients

      • 1 lb ground beef (80% lean)
      • 4 slices of bacon
      • 4 slices of cheese (your choice)
      • 4 hamburger buns
      • 1 tomato, sliced
      • 1 cup shredded lettuce
      • 8-10 pickle slices
      • Salt and pepper to taste
      • Optional toppings: onions, ketchup, mustard, mayonnaise

Directions

1. Prepare the Bacon:

      • Cook the bacon until crispy. You can use a skillet. We like to bake it in the oven.
      • Drain on paper towels and set aside.

 

2. Form the Patties:

      • Divide the ground beef into 4 equal portions and form them into patties.
      • Make a small indentation in the center of each patty with your thumb to prevent them from puffing up while cooking.
      • Season both sides with salt and pepper.

 

3. Cook the Patties:

      • Heat a grill, griddle or skillet over medium-high heat.
      • Cook the patties until they reach your desired level of doneness.
      • About 1 minute before they are done, add a slice of cheese to each patty.

 

4. Assemble the Burgers:

      • However you want to!

 

5. Serve and Enjoy:

      • Serve the cheeseburgers hot with your favorite side dishes like fries, onion rings, or a simple salad. Enjoy!
