Burrito

Ingredients
- 2 boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cooked rice (white or brown)
- 1 large tomato, diced
- 1 cup shredded cheese (your choice)
- 1 ripe avocado, sliced
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- Salt and pepper to taste
Directions
1. Cook the Chicken:
- Season the chicken breasts with salt, pepper, and chili powder.
- Heat the olive oil in a skillet over medium-high heat.
- Add the chicken breasts and cook for about 5-7 minutes per side, or until fully cooked and no longer pink inside. Make sure it reaches an internal temperature of at least 165°F
- Remove from the skillet, let it rest for a few minutes, then slice or shred the chicken.
2. Prepare the Rice and Beans:
- If not already done, cook the rice according to the package instructions.
- In a small saucepan, heat the black beans over low heat until warmed through.
3. Assemble the Burritos:
- Warm the tortillas in a microwave or on a dry skillet for a few seconds to make them more pliable.
- Lay a tortilla flat and start layering the ingredients in the center: a portion of rice, black beans, sliced chicken, diced tomato, sliced avocado, and shredded cheese. Note: you can add any other toppings you’d like (example: lettuce, onions, mayo, hot sauce, etc.)
- Fold the sides of the tortilla over the filling, then roll it up from the bottom to form a burrito. Repeat with the remaining tortillas and fillings.
4. Optional: Toast the Burritos:
- For a crispy burrito, heat a clean skillet over medium heat.
- Place the burrito seam-side down and toast for 1-2 minutes per side until golden brown and crisp.
5. Serve and Enjoy:
- You can also serve with salsa, sour cream, or guacamole on the side for extra flavor.

Cheeseburger

Ingredients
- 1 lb ground beef (80% lean)
- 4 slices of bacon
- 4 slices of cheese (your choice)
- 4 hamburger buns
- 1 tomato, sliced
- 1 cup shredded lettuce
- 8-10 pickle slices
- Salt and pepper to taste
- Optional toppings: onions, ketchup, mustard, mayonnaise
Directions
1. Prepare the Bacon:
- Cook the bacon until crispy. You can use a skillet. We like to bake it in the oven.
- Drain on paper towels and set aside.
2. Form the Patties:
- Divide the ground beef into 4 equal portions and form them into patties.
- Make a small indentation in the center of each patty with your thumb to prevent them from puffing up while cooking.
- Season both sides with salt and pepper.
3. Cook the Patties:
- Heat a grill, griddle or skillet over medium-high heat.
- Cook the patties until they reach your desired level of doneness.
- About 1 minute before they are done, add a slice of cheese to each patty.
4. Assemble the Burgers:
- However you want to!
5. Serve and Enjoy:
- Serve the cheeseburgers hot with your favorite side dishes like fries, onion rings, or a simple salad. Enjoy!

Chili

Ingredients
- 1 lb ground beef
- 1 can (15 oz) tomato sauce
- 1 can (15 oz) beans (kidney beans or black beans), drained and rinsed
- 1 cup shredded cheese (cheddar or your choice)
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 jalapeño, finely chopped (seeds removed for less heat, if desired)
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
Directions
1. Cook the Beef:
- Heat the olive oil in a large pot over medium heat.
- Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
2. Sauté the Vegetables:
- Add the diced red bell pepper, minced garlic, and chopped jalapeño to the pot with the beef.
- Cook for 3-4 minutes, or until the vegetables are softened and the garlic is fragrant.
3. Add Spices and Sauce:
- Stir in the chili powder, paprika, salt, and pepper.
- Add the tomato sauce and mix well to combine.
4. Simmer the Chili:
- Stir in the beans.
- Bring the mixture to a simmer, reduce the heat to low, and cook for 20-30 minutes, allowing the flavors to meld together. Stir occasionally.
5. Serve and Enjoy:
- Ladle the chili into bowls and sprinkle with shredded cheese on top.
Tips
- Adjust Heat: If you like your chili spicier, leave the seeds in the jalapeño or add a pinch of cayenne pepper.
- Beans: You can use any type of beans you prefer or a mix of beans for variety.

Pasta

Ingredients
- 12 oz penne pasta
- 2 boneless, skinless chicken breasts, sliced
- 6 slices of bacon, chopped
- 1 medium onion, finely chopped
- 1 red bell pepper, diced
- 1 cup heavy cream
- 1 cup shredded cheese (we used mozzarella)
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions
1. Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add the penne pasta and cook according to the package instructions until al dente.
- Drain the pasta and set aside.
2. Cook the Bacon:
- In a large skillet, cook the chopped bacon over medium heat until crispy.
- Remove the bacon with a slotted spoon and drain on paper towels.
- Discard most of the bacon fat, leaving about 1 tablespoon in the skillet.
3. Cook the Chicken:
- In the same skillet, add the sliced chicken.
- Season with salt and pepper, and cook until the chicken is browned and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
4. Cook the Vegetables:
- In the same skillet, add the olive oil if needed, then add the chopped onion and diced red bell pepper.
- Sauté until the vegetables are soft and the onion is translucent, about 5 minutes.
5. Make the Cream Sauce:
- Reduce the heat to low and pour in the heavy cream.
- Bring to a gentle simmer, stirring occasionally.
- Add the shredded cheese and stir until melted and the sauce is smooth.
- Season with salt and pepper to taste.
6. Combine Everything:
- Add the cooked pasta, chicken, and bacon to the skillet with the cream sauce.
- Toss everything together until the pasta is well coated with the sauce and all ingredients are evenly distributed.
- Cook for an additional 2-3 minutes to heat through.
7. Serve and Enjoy:
- Serve the creamy chicken and bacon penne pasta hot.

Pizza

Ingredients
- 1 pound pizza dough (store-bought or homemade)
- 1/2 cup tomato sauce
- 1 1/2 cups shredded mozzarella cheese
- 1 red bell pepper, thinly sliced
- 1/2 cup pepperoni slices
- 6 slices of bacon, cooked and crumbled
- 1 cooked chicken breast, diced or shredded
- Olive oil
- Salt and pepper to taste
Directions
1. Preheat the Oven:
- Preheat your oven to 475°F (245°C).
- If you have a pizza stone, place it in the oven to heat up. If not, you can use a baking sheet.
2. Prepare the Dough:
- On a lightly floured surface, roll out the pizza dough to your desired thickness.
- Transfer the rolled-out dough to a piece of parchment paper for easy handling.
3. Add the Sauce:
- Spread the tomato sauce evenly over the pizza dough, leaving a small border around the edges for the crust.
4. Add the Cheese:
- Sprinkle about half of the shredded mozzarella cheese over the sauce.
5. Add the Toppings:
- Distribute the sliced red pepper, pepperoni slices, crumbled bacon, and diced chicken evenly over the pizza.
- Sprinkle the remaining shredded mozzarella cheese on top of the toppings.
6. Season the Pizza:
- Drizzle a little olive oil over the top of the pizza.
- Season with a pinch of salt and pepper.
7. Bake the Pizza:
- Carefully transfer the pizza (with the parchment paper) to the preheated pizza stone or baking sheet.
- Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
8. Serve and Enjoy:
- Remove the pizza from the oven and let it cool for a few minutes before slicing.
- Slice and serve your homemade pizza hot, and enjoy!

Ingredients
- 1 lb ground beef
- 1 medium onion, finely chopped
- 1 cup salsa (store-bought or homemade)
- 8 small tortillas (soft flour or corn)
- 1 cup shredded lettuce
- 1 cup shredded cheese (Mexican blend)
- Sour cream, for topping
- Salt and pepper to taste
- Optional toppings: diced tomatoes, avocado, etc.
Directions
1. Prepare the Beef:
- In a large skillet, cook the ground beef over medium heat, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.
2. Season the Beef:
- Add the chopped onion to the skillet and cook until the onion is translucent, about 3-4 minutes.
- Drain any excess fat from the skillet.
- Season with salt and pepper to taste.
- Simmer for another 5 minutes, allowing the flavors to meld together.
3. Assemble the Tacos:
- Spoon a portion of the beef mixture into each tortilla.
- Top with shredded lettuce, shredded cheese, salsa and a dollop of sour cream.
- Add any additional toppings you like, such as diced tomatoes, avocado, etc.
4. Serve:
- Serve the tacos immediately while they’re warm and enjoy!
